Grilled Lemon Chicken with wholegrains

This is one of my favourite summer time recipes, and I don’t make it anywhere near often enough!

It’s super easy, and can be enjoyed hot for dinner and cold for lunch the following day. The below recipe serves three hungry adults.

You will need:

For the chicken marinade:

  • Chicken (breast or thigh). I use one breast per person, as a general rule
  • 3 Lemons
  • Chives
  • Thyme/lemon thyme
  • 2 cloves of garlic
  • Olive Oil
  • Salt & Pepper

For the Wholegrain Salad:

  • Bulgar wheat, cous cous or quinoa – whichever you prefer!
  • Spring onions
  • Cucumber
  • Black Olives
  • Feta cheese (cubed)
  • Lemon zest
  • Red or green pepper (capsicum)
  • Juice & zest of 1 lemon

The Marinade

Prep time: 20 mins

Fridge time: as long as you can!

I tend to make up the chicken & marinade combo the night before I’m planning to cook this dish, so the chicken has pleeeennty of time to soak up the lemony goodness!

How to:

First up, zest your lemons & place the zest in a good sized mixing bowl. Make sure you keep a little zest to one side for your salad.

Next, you want to add the juice from the lemons. Top tip learned from my bartending days – roll the lemons between your hand and a chopping board *before* you slice them. Do this until the lemons feel nice and squidgy, and you’ll get a lot more juice out of them!

Chop up your garlic, chives and thyme and add them to the bowl. If you’re fresh thyme, add the stalks to your marinade too.

Add a splash of olive oil – how much is totally up to you. I like to add 1 part olive oil to 2 parts lemon juice.

Cube/slice your chicken. If you’re using chicken thighs, then you can add them into the marinade whole.

Season with salt & pepper.

Once you’ve mixed everything together, cover the bowl with clingfilm or your favourite plastic alternative and stick it in the fridge for a few hours.

When it comes to cooking your chicken, you can pan fry, grill or BBQ it.

It tastes heavenly when barbequed!

The Wholegrain Salad

Prep time: 20 minutes including cooking time for the grains.

How to:

Pour your chosen grains into a bowl or jug. I’ve mixed quinoa and bulgar wheat together for this particular dish.

Add enough boiling water to the grains so they are just covered. Let the grains absorb the water, and taste to check if they’re cooked. If the grains are too al dente, add a little more water to the mixture.

Chop up your cucumber, pepper and spring onions. Add these along with the olives to your cooked grains.

Grate the zest of the remaining lemon into the mixture and add the juice.

Salt & pepper to taste, and mix it all together!
